creamy pesto gnocchi with peppered green beans
Serves: 3-4
  • 1 pound gnocchi
  • 2 cups green beans, cut into ½-inch pieces
  • 1 cup pesto
  • ¼ cup heavy cream
  • ¼ cup ricotta
  • Salt & pepper
  1. Prepare gnocchi according to package instructions.
  2. Meanwhile, bring a large pot of water to boil and cook green beans 3-4 minutes, or until slightly tender.
  3. Drain and season with pepper. In a large skillet, add gnocchi, pesto, and cream, stirring and cooking for 2-3 minutes. Top gnocchi with green beans and ricotta.
