If you’re desiring something south of the border but not in the typical tortillas or tortilla chip formats, consider this roast with a black beans salad. It would take a lot for me to tire of tacos, but I must consider my other eaters.
Add some white rice and you’re done!

Mexican Pork Roast with Black Bean Salad
Serves five to six
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon pepper
3/4 teaspoon salt, divided
1/4 teaspoon red pepper flake
1 and 1/2 pound pork roast
4 tablespoons olive oil, divided
30 ounces black beans
1 avocado, cubed
1/2 cup cilantro
6 green onions, sliced
2 tablespoons lime juice
Heat oven to 375 degrees. In a small bowl, stir together chili powder, paprika, garlic powder, pepper, 1/2 teaspoon salt, and red pepper flake. Drizzle pork roast with 1 tablespoon olive oil. Rub seasoning onto roast.
Roast for 50-60 minutes, until internal temperature reaches 160 degrees.
Stir together black beans, avocado, cilantro, scallions, lime juice, 3 tablespoons olive oil, and 1/4 teaspoon salt. Serve salad with roast.
